Karuizawa “Chez Kusama” Collaboration – One Suite Gastronomy Stay












On January 30th and 31st, 2026, we hosted our second collaboration dinner event in approximately two years, featuring the highly sought-after French restaurant “Chez Kusama” from Karuizawa, Nagano Prefecture, in collaboration with La BOMBANCE Kouri Island.
Once again, Chef Kusama proposed a selection of ingredients sourced from Okinawa Prefecture.
Using these ingredients as a foundation, Chef Kusama and La BOMBANCE Kouri Island’s Executive Chef, Kajiwara, each created their own menus.
The course alternated between French and Japanese dishes, showcasing distinct culinary approaches.
Each plate offered moments of surprise and discovery, revealing new expressions and flavors drawn from the same ingredients.
The wine pairings also featured unexpected combinations—such as intentionally pairing a white wine with a meat dish prepared with miso—challenging the conventional notion that “meat equals red wine.”
Guests enjoyed the harmony between the cuisine and pairings, and many praised the experience for its fresh and memorable surprises.
Throughout the event, the venue was filled with a friendly and warm atmosphere, resulting in two truly special evenings that could only be experienced here.
